It is made to degrade in the duodenum's alkaline environment, releasing the pancreatin's active enzymatic components as it does so (amylase, protease, and lipase). Amylases hydrolyze dietary starch to create maltose, maltose, and dextrin. Proteases create amino acids and oligopeptides by rupturing the peptide bonds that hold proteins and polypeptides together. Dietary triglycerides are hydrolyzed by lipase to produce one monoglyceride molecule and two fatty acid molecules. no less than 25 times its weight in soluble carbohydrates from starch in 5 minutes, and no less than 25 times its weight in protease from casein.
